Way I figure, if he deflects/catches the dagger and we're fast enough, we'd be able to get him just as he does it, unprepared for a shield to the face. If he just takes it, hey, that's one for us. Slam the dagger pommel with the shield for good measure. If he sidesteps it, the situation is a little worse for us, but it's harder to defend against two things at once than to attack twice. If we are quick enough, we should succeed. That said:
1. Sheathe sword. 2. Start running w/ shield bared. 3. Throw dagger.
It's not a cautious manoeuvre, but if the Red Fang is a more skilled warrior than us, we don't want him to put us on our heels.
Other notes: He looks like he might jump, so don't dash until he's off the desk. If he jumps at us, bat away with shield while he's in the air, pin down. His empty hand is suspicious, so he either fights with both claw and sword, or might throw something. Keep shield readied.

In a flash, the Gnollboss leaps over the table and is sending a flurry of blows my way with his thin flyssa. His style is fully aggressive, and his speed and agility are so overwhelming he's keeping me pinned down just trying to deflect his attacks! My shield shudders with every impact and I nearly stagger from the ceaseless assault.
I'm too slow with my injured foot to be a match for his dexterity! I have to come up with a better plan.

Against my every natural instinct, I allow the Gnollboss to back me into a corner. He counters by moving clockwise around me for a better angle. He begins stabbing and slashing once more, spinning wildly in a whirlwind of destruction with every blow. But his mobility is now severely limited by his position, stuck between me and the table.

As you say, his mobility is limited. His sword is also long and curving. As he draws back, push forwards, getting inside his reach. Handle yourself as the Romans, with tight movements, favoring the thrust instead of the cut. He cannot dance backwards. The desk pins him. Raise your shield against his sword, allowing for a savage thrust to his underbelly.

I intend to go in for a follow-up backswing and finish him off while he staggers, but rather than cause reeling, the injury only seems to infuriate the Gnollboss. He goes into a frenzy, stabbing the pointed flyssa at me, his arm pistoning the blade in my direction like a furious machine. He howls in a growling dialect I cannot understand.

Again, I feel pinned.

The fact I am still standing, breathing, and circulating blood proves to me the sword bypassed any major organs. I should be fine, all things considered. The same cannot be said of the Gnollboss, whose lifeless body now concerns itself only with cruentation.
His final strike, and it was a flesh wound. How fitting.
Nonetheless, I'm still losing blood. I should find something to aid this problem.

The desk is empty, but the Gnollboss carries a key for the large chest in the corner. The following treasures lie inside the Boss Chest:
120 gold coins.
A roll of cloth bandages, which I decide to apply immediately.
An iron pick-axe.
Numerous food items, including a loaf of fresh bread, a raw leg of meat, several bottles of beer (empty), a bottle of Minotaur's milk, and a fist-sized piece of pungent aged cheese.
A handful of mimwit sprigs. Chewing on these is a ward for toothache.
A large jug of oil-looking substance. This one is labelled "lantern oil".
A small toy sword, carved out of wood.
And lastly, a strange, vaguely egg-shaped container with a latch and hinge, and inside a small smooth brown-yellow stone.

To be honest, I was hoping for something grander as this dungeon's final haul.

I apply the bandages as best I can to staunch the bleeding, and drag the corpse of the slain Gnollboss outside for carrion-eaters to make use of.

I've taken his sword as well, but it's long, and the flyssa is unbalanced, making it a poor fencing weapon. An unwieldy blade, suited especially to unwieldy fighters, like my defeated foe. Still, I might as well hold onto it.

...the minions are slain, the treasures are secured, the paths are all explored, the rooms are exhausted, and the dungeon boss is slain.
